Thin-cut minute steaks from the sirloin or the eye of the silverside. The cut from the sirloin is generally more tender than that from the silverside. These steaks cook quickly because of their thickness, hence the term 'minute steak'. Be sure to cook quickly, over a high heat, to ensure tenderness.
