Chorizo, Sweet Potato Gnocchi & Red Pepper Sauce

Classic with a twist! Enjoy a mouthful of divine spicy Chorizo, Gnocchi and fresh Red Pepper Sauce that with become a family favourite overnight.

Ingredients

  • Chorizo Sausage (available here)

 

For the gnocchi

  • 2 large sweet potatoes
  • 50ml butter
  • 2 cups all purpose flour
  • Salt and black pepper for seasoning

 

For the roasted red pepper sauce

  • 2 red peppers 
  • 4 rosa tomatoes
  • 1 large aubergine
  • 1 large onion
  • 2 garlic cloves
  • Juice from 1/2 lemon
  • Large handful of basil 
  • Olive oil
  • Salt and black pepper for seasoning

Directions

  1. Roast the sweet potato at 200°C for 40 mins or until soft. Allow for light charring.
  2. Peel and mash the sweet potato whilst still warm.
  3. Mix in the butter and seasoning.
  4. Gradually (in order to avoid flour lumps) add the flour into the sweet potato mixture.
  5. Flour a working surface and knead dough for 5 min.
  6. Allow dough to rest for 40 min.
  7. Slice and cube all vegetables, but
  8. Keep the garlic cloves whole.
  9. Roast the peppers, onion, aubergine and tomatoes with the garlic cloves at 200°C for 45 min or until slightly charred and cooked through.
  10. Place roasted vegetables, handful of basil and lemon juice into blender and blend until smooth. Taste the sauce and say “Oh Yum!”
  11. Place sauce in saucepan to keep warm for later use.
  12. Quarter the gnocchi dough and roll out into long sausages (about thumb thickness), slice the dough sausages into 2 cm long balls.
  13. Start boiling some water (seasoned with salt and olive oil), place gnocchi balls into water and boil until it starts to float (that means it is cooked). Be warned, the gnocchi will be quite starchy and slippery.
  14. Slice up the Chorizo sausage into discs.
  15. Heat a gulp of olive oil in a frying pan and fry the Chorizo until gold and caramelized. Remove the Chorizo and set aside.
  16. Place your Gnocchi into the Chorizo oil and fry until caramelized and crispy.
  17. Mix the Chorizo, Gnocchi and Red Pepper Sauce together in a serving dish of your choice.
  18. Garnish with basil.
